All about Licorice: From candy to salt to tea

When young, my mother would bring home sweet liquor from the liquor cabinet, such as Vodka, whiskey, gin, brandy or rum, she would usually ask me what I preferred. My response was always, "licorice." Turns out, those innocent looking little pieces of licorice actually taste quite delicious like biting into a saltine cracker. The licorice-flavored candies, such as s'mores or licorice twists, conjure up images of marshmallows and chocolate syrup and just make me crave those memories even more!

Of all licorice varieties, the sweet, crunchy Licorice Nerds is probably my favorite. These are available in three varieties, crushed, powder and fresh. The crushed version is the classic gummy variety and comes in a five-inch square piece. The powder is quite chewy and has a pleasant, licorice like flavor with a slightly bitter aftertaste. The fresh licorice twists are very small and come in twelve piece packs which are wrapped in wax paper with a string of salt on each side.

My favorite licorice candy is the Dutch oven variety. This is available at most groceries and is a tasty alternative to those licorice cookies and cakes you might be accustomed to. The Dutch oven variety has a very authentic flavor which is sweeter than your traditional sweets and is almost akin to baking buns. The Netherlands muesli is made from an Indian recipe and not from any sugary, artificial flavor. It has a rich cinnamon flavor and is very easy to prepare.

Licorice candy can also be found in a variety of salted, salty, and sweet forms. While the standard licorice candy bars are always sweet, I like to snack on licorice nips instead. These are quite small pieces that resemble little chips or bite sized candy darts. They come in a wide assortment of flavors such as cranberry, apple, chocolate, and licorice. They are often topped off with some sort of drizzling or powdered sugar.

Licorice bark is another type of licorice that comes in a crunchy pulp form and is often mixed with confectionary items to create a saltwater candy blend. The crunchy bark pieces retain much of their salt and sweetness when they are ground down, similar to chewing on a piece of sand. They can also be sprinkled onto cookies, cakes, and ice cream. Their saltiness and sweet flavor make them a favorite in tea and coffee as well.

Licorice root is another common ingredient in candies and snacks. This root can be purchased at almost any grocery store and usually in powdered form. Because licorice root can be toxic when ingested, it is normally added to candies in a powdery form to prevent the possibility of accidental swallowing. A very bitter tasting licorice flavor is often added to teas to mask the licorice root's sweetness. Licorice root is also used to treat ailments such as sore throats and stomachaches as it helps relieve the inflammation by soothing irritated mucus membranes.
