A higher percentage of cocoa butter is often used to make white chocolate. Cocoa butter has a higher percentage of cocoa solids than other milk solids, making it a higher percentage of melt weight. It is most often used in creating dark chocolate. This is because it is easier to get the same amount of melt off from this type of chocolate. Pure white chocolate does not melt as easily as milk chocolate, so a lower percentage of cocoa butter is needed to achieve the same result.
Pure white chocolate may contain only 20% of the milk solids. This means that a much smaller amount of cocoa butter is needed to produce a darker, less rich chocolate. Also, white chocolate may come from a variety of locations. For example, the chocolate may come from a dairy farm, a cocoa factory, or a sugar cane farm. When white chocolate is produced in a factory, the cocoa butter is heated in a boiler and then mixed with water, fats and milk solids.
