Gum Base Taste
Gum is a chewy, cohesive liquid made of a gum binder, sugar, and other substances designed so that it can be chewed without swallowing. Modern gum is usually composed of sugar, gum base, pliable gum resins, additives, flavors, colours, and, in most cases, a hard, powdery or sugary polyol coating. Its consistency is closer to that of plastic since of its physical-chemical characteristics of a rubber, plasticizers, and coatings, which all contribute to its properties for cosmetic and medical applications.
Most people chew on gums for several reasons including for their chewing comfort, as an aid to mouth dryness, or to aid in cleaning teeth. Since some gums are used as an aid to clean teeth, they are called gums, or dental chews. Certain types of foods such as nuts, berries, pretzels, and grapes that cause dryness in the mouth can be chewed on to help alleviate this problem. Since some gums are used to taste bitter, they are called bitter gums. And gums are used to cover cavities so that they do not need to be filled when a tooth is knocked out, or removed when a cavity is causing a person pain or infection.
Gum can be divided further into two groups, the soluble and the insoluble variety. The soluble variety is made from the different chemical elements that are found within the cells of the body and in the tissue, such as collagen, elastin, and protein. The most common examples of these are found in dairy products (cheese, yogurt, milk, etc.) and meats (chicken, beef, turkey, etc. ).
The insoluble type consists of gum resins and polymers. These components are not essential to the taste or purpose of chewing gum but are what give the product its strength. Gum resins make the gum stickier when chewed on, therefore making it easier to hold onto. The more polymers or resins that make up the gum, the harder it is to chew.
Some people prefer the flavor of bubble gum to that of other types. However, both are used to bring out certain tastes and aromas in food. Bubble gum has become especially popular in certain cuisines such as gumbo and pasta. It has even become popular in candies because of its ability to add flavor when a piece of candy is eaten while it is still on the gum. Therefore, chewing gum might even be as important to the enjoyment of the candy as chewing the candy itself.
Table 3 includes a variety of polymers and other materials with various effects on gum base taste. Gum base flavor can be created from sugar polymers (including brown sugar), from citric acid, from vanillin and from resins. There are gum bases that are produced from a mixture of all of these polymers.
