The second step is to roll out the pastry dough on the floured board until it reaches the desired thickness. Remember that you don't have to use the same rolling pin for all your pastries, because each one is different and will need to have its own unique shape. After rolling out the dough, you can then cut it into the desired shape according to your taste. For example, if you want your baked layers to look like noodles, then you should work on them from the center out. If you would like to have your pastries look more like cakes, you can use different tips and handle them differently.

Once you are done with cutting and preparing the pastries, you can then start the assembling process. When your pastries come out of the oven, you can spread them evenly onto a baking tray. It is important to cover the pastries with a paper or plastic wrap so that they don't shrink when they are baked.
