How To Make Chocolate Paste

Chocolate, a treat so beloved of all, can be a laborious process as it has to go through several stages before it gets to your hands. Let us take a brief look at the various stages involved in chocolate manufacturing. The process of manufacturing chocolate begins with the beans being mechanically processed by a grinding machine which removes jute, bits of cocoa pod and other waste material from the beans. The resulting dry powder is further processed using various chemical processes like baking powder and adding the flavoring agents to give chocolate the sweet taste. Finally, the solid waste material is extracted and the fresh chocolate is prepared for shipment.

How exactly does chocolate get prepared? It is prepared by melting chocolate using either a double boiler or a stovetop microwave, stirring continuously to avoid boiling the chocolate. Stirring is important because it helps in breaking the cocoa molecules into smaller particles which help in the speedy melting process. Chocolate gets prepared in this order: First, the chocolate is heated to 30 seconds or more under a double boiler.

The chocolate is allowed to cool. Pure chocolate requires no further processing. When the chocolate cools, it will be stirred into chocolates. If you have read about how chocolates are made then you must have noticed that the chocolate goes through three different tempering processes - bitter, semi-bitter and pure chocolate.

Let us now have a look at how chocolate is tempered. Chocolate is heated until it reaches its melting point. It is then allowed to rest, during which time the chocolate dries up and takes the shape of its mold. After the chocolate dries, it is reheated to full temperature and allowed to cool, again stirring constantly to prevent burning. Let the chocolate cool completely before you store it.

You will know when the chocolate is ready by looking at the color. Pure chocolate requires direct heat, while the other two require indirect heat. When the color of the chocolate has changed, it means that the melted chocolate is ready to be molded into a certain shape.

While chocolate is not very expensive, you can still add a lot of flavor by cooking it with different flavors of milk and fats. However, if you are on a tight budget, all you need to do is purchase a cheap bowl or container and add your own ingredients. Mix the ingredients thoroughly and add them one at a time to the prepared chocolate paste. You can play around with different flavors to get a combination that you think tastes good.
