Kit Kat - From Back to Basics

The simple story of how a Kit Kat, once only a British chocolate export, suddenly became a massive business in Japan is quite amusing. In June of 1995, at a trade fair in Hong Kong, an entrepreneur by the name of Takanori Momo decided that he was going to come up with a chocolate bar that he could sell all over the world. He knew that he had to come up with something special, so he turned to his chocolate expert, Hitoshi Matsubara. Matsubara, who had previously worked for Kit Kat International, started to work on this new product. He knew that it was going to be a huge business, so he put out a listing for a chocolate manufacturing company to which he would place all of Kit Kat's manufacturing costs.

The story begins six years later, when in July of 1996, Matsubara and five other members of the Kit Kat management team got together to have a party to celebrate the company's twenty-fifth anniversary. The main attraction was of course the Kit Kat wafers that they had designed. As you can imagine, there were some heated discussions. Among the Kit Kat management team, however, it came down to something fairly simple: why not put all of the wafers into one gigantic candy bar? They quickly put together a presentation for their bosses to look at, but they didn't have any idea of just how successful they could be.

After they presented their ideas to their bosses, it only took about six months for them to be granted their much-deserved victory. When the company began to sell their bars, it was immediately successful. The success was attributed in large part to the simplicity of the design: all that was needed to make a Kit Kat bar was chocolate. Since chocolate is such a universal product, it makes sense that anyone would be able to successfully market a candy bar that was uniquely Kit Kat-shaped. And because the company has been able to do so, it's little wonder that Kit Kat has become a global household name.

But the success of the bar isn't just its design; it's also the marketing. After all, who in their right mind would consider eating chocolate a day or two, let alone a whole hour? The answer is simple: most people just don't. And for good reason. Chocolate is a very complicated food and to make it taste like anything but yummy, you have to use a different kind of sweetener.

The wafers that Kit Kat uses are nothing more than a combination of corn starch and water. These ingredients are combined in such a way that it forms the wafer outline of the chocolate bar, while at the same time keeping it somewhat soft. This allows the melt-in-place process to work as smoothly as possible. While Kit Kat wafers do cost more than your average candy wafer, they are worth the price.

While Kit Kat has managed to popularize its delicious wafers, the real star of the candy has always been the chocolate itself. Kit Kat wafers are great, but to really enjoy the flavor of this sweet treat, you need to indulge in something soft and dark like dark chocolate.
