For example, coarse flour for tough or crumbly pastries, which could be made into a pancake like dough by using a rolling pin, and light and watery flour for making delicacies like macaroons. Pastry chef were also highly skilled in decorating the pastries, so that when they were baked the colors would come out perfectly.
Pastry dough was carefully prepared before being formed into pastries. The most common ingredients of this kind of dough are yeast, butter, water, and milk. All of these ingredients are combined together and the mixture was kneaded until it forms a smooth and thick dough. The most important thing about the preparation of the dough is that it should be able to produce a firm and durable dough that can handle the rigorous demands of being baked.
After the creation of the dough, it was then cut into pieces, rolled and fried. This type of cooking was done to prepare Pastry Puff pastry, which was widely popular in the American South because of its light, fluffy texture. The original recipe of Pastry Puff had coffee and chocolate chips combined with cinnamon, but nowadays this delicious pastry can also be prepared using other ingredients that would complement its taste and texture, such as nuts and dried fruits.
