Pastry chefs usually let their dough rise in a warm place for one to two hours before baking them. This allows the dough to become more elastic so that it will not stick to the sides of the pan when baking. Once the dough is ready, the chef mixes the dry ingredients together with the wet ingredients until the ingredients are completely blended into a paste. This makes a rough paste that can be used to form the dough for the pastries. This process is sometimes referred to as kneading the dough.
