Once the layers are done baking, they put the butter, sugar, eggs, and vanilla into a mixer. Mix it all up until smooth and fluffy. Then the next step is to pipe or knead the batter into the center of each pasty.

When making pastries from scratch, it is important to use quality ingredients. The flour that is used to make the pastry should be able to stick to the egg and to the hands. The cooking time will depend on the thickness of the batter, but it shouldn't take too long. Most importantly, the quality of the pastry is critical because it is the part of the finished product that people will notice. A poorly made pastry will taste old and unpalatable to a beautifully done one will become one of their favorites.
