The Art of Making Pastry
Pastry refers to any dish which contains bread or pastry. Pastry is basically a dough of all-purpose flour, water and lard which can either be sweet or savoury. Sweetened pastries often described as bakery's favourite confectionery. The word "pastry" actually implies many types of baked goods made with ingredients like flour, fat, milk, eggs, sugar, shortening, baking powder, and baking soda. In some countries, like France, only potatoes are used for making pastries, while in other countries like Italy, lemons and oranges are also used for making pastries.
In many European countries, like France, baked pastries are used as an important part of the lunch. They are commonly eaten during evening meals as well. These sweet delicacies are also used in baking bread, pies, scones and, on special occasions, for dessert. In general, there are two types of pastries; one is the basic sweet that has no taste of its own and the other is the candy coated pastry. A basic sweet pastry has no flavour of its own and normally has only one or two ingredients added to it. On the other hand, a decorated pastry has a taste of its own and is decorated with fruits, nuts, candies or other sweeteners.
In most cases, the dough for making a pastry starts by taking cold water and putting this into a yeast mould. After this, all that remains is to knead the dough into a ball shape. The next stage is to roll out the pastry dough so that it looks dense. This also helps to create a rough surface on which the sweet glazes can be fitted. Kneading helps to create a long, shiny surface on which to finish the pastry.
Once the pastry is ready, the glaze is applied using a brush or a spatula. The glazing is used to give the pasty a glossy finish, which gives it the appearance of being fresh from the kitchen oven. However, this glossy appearance is not a necessity and can be left to look as plain as possible.
When using sugar for making the glaze, it is advisable to use a very soft butter. This allows the sugar to become completely coated with the butter without being too hard. This also ensures that the final product will have a nice, smooth taste. In addition to being used for glazing, eggs can also be used to make tasty pies and scones. The yolks should not be added at once because they will curdle, which makes for a horrible texture.
Pastry dough can also be made by using guar gum. Guar gum acts as a stabilizer and emulsifier, ensuring a good mixture when baking the pastries. It also adds extra tartness to the pastry, although this comes at the cost of increased cooking time. Lastly, freshly made pastry is also good if you would like to make some healthier cookies or muffins for dessert. Using egg free icing will make a thick but delicate sweet treat.
